Finely chop the vegetables, mix with salt, and let sit for 2 hours. Squeeze out the juice, then bring vinegar, sugar, and mustard seeds to a boil. Add the vegetables and simmer for 10 minutes. Mince or finely chop the chicken, season with spices, form patties, brush with oil, and grill for 5 minutes on each side. Toast the pita buns, spread mayonnaise, add lettuce, tomato, the burger patties, and a portion of the relish sauce.
