YERBA MATE
Paraguayan holly

They say it is a healthier substitute for coffee
 Brewing degree: 70-80*C
Fermentation stage: Coffee goes through a fermentation process while drying the beans after they are harvested. However, the degree of fermentation in coffee is much lower than in tea. This process is crucial for the development of the characteristic flavors and aromas of coffee beans.
Production process: Yerba mate leaves and twigs are dried and ground, and then prepared for brewing.
Color: The coffee beans themselves are usually green. However, after the roasting process, which gives them a brown color, the coffee takes on a shade ranging from light brown to dark brown, depending on the degree of roasting.
Taste: Characterized by a delicate, herbal taste with a slight bitterness. It is often described as a blend of herbs, grass and light fruity notes.
Caffeine: Contains caffeine, but also other compounds such as theobromine and theophylline. The stimulating effect is milder and more even than that of coffee.
